Stifado A Corfiot Speciality
Ingredients
1 kilo beef
1 large onion
1 tea cup olive oil
3 Bay leaves
1 tablespoon peppercorns
2 tablespoons tomato paste
2 cloves garlic
Salt
Pepper
½ wine glass wine vinegar
1 wine glass red wine
2 kilos baby onions
Saute chopped onions and garlic with oil in a saucepan. Cube meat and sauté
with other ingredients until lightly browned. Season with salt and pepper adding peppercorns, bay leaves and tomato paste and allow the ingredients to simmer. Then add wine and vinegar and cook until wine & vinegar are absorbed. Simmer for approximately another 45 minutes.
Sauté the baby onions for about 10 minutes in oil in a separate saucepan, until they are lightly browned and then add them to the meat mixture as well as 2-3 glasses of water. Allow to simmer until the mixture thickens.
